We’re Sprout & Co., and what we do is governed by our Food Ethos. We believe in using the very best produce and ingredients in our food and beverages, as the choices we make in what we consume have consequences that last far beyond the length of our lunch break. Every choice we make about what we eat, and where it comes from, impacts on the health of our bodies, our communities and our planet. We continuously look for ways to make the best sustainable decisions and mindfully source the freshest ingredients. We feel a great sense of responsibility to make Sprout & Co. and it’s community (that includes you) a wave of positivity that spreads all around us, from salad bowl to the seeds in the soils of our growers. The way we run our business is also directed by our beliefs. Every part of what we do is our Food Ethos is action, and you can see it in our kitchen.
Seasonality at the core
Our menu changes as the seasons change. With each season come a new variety of fresh produce, bursting with natural good stuff that is not only delicious, but environmentally friendly. We head to Smithfield market to get the very best of what nature has for us at that moment, and we get excited to see what we can create and offer to you with it.
It only makes sense for us to use our own, irish, local ingredients. And here’s why.
What do you get if you force anything to do soing against its capabilities or will? Not a very good result and poor quality product. Same goes for food. The food with the best flavour is the food that the ground wants to grow in its current season and climate. Those who work with irish soil every day know it best, that’s why we listen to our farmers. Their seasonal produce dictates what’s available on our menu, not the other way around. This is how we ensure the best, most flavoursome and freshest ingredients with the peace of mind that we’re also supporting our local communities and helping irish farms thrive. We work closely with Ciaran Butler, one of the traders at Smithfield market, to ensure local seasonality and link with the very best growers who have our Food Ethos in mind. Our people are passionate about food too, and they love what they do just as much as we do.
